I am a huge fan of making your own granola. Granola is extremely forgiving with substitutes and eyeball style measurements and always tastes better than store-bought. Sadly though, granola usually is high in fat to give it flavour and crunch. To make it aqua fabulous, I used whipped Aquafaba (from a can of chickpeas), as a substitute for some of all of the oil in a granola recipe. It also helps to clump the granola in larger chunks. It is reminiscent of Quaker Harvest Crunch cereal without all the bad stuff.
The cream of tartar is not essential, but if you don’t use it, it will take up to double the time to whip up the aquafaba. The remaining coconut oil is not essential, but I keep it in for flavour.

Aqua-fabulous granola
Ingredients
- 3 cups (300g) rolled oats
- 1 cup (100g) sliced almonds
- 1 cup (75g) large flaked coconut
- 2 tsp cinnamon
- 1/2 tsp salt
- 1/4 cup (60mls) coconut oil
- 1/4 cup (60 mls) honey (or maple syrup)
- 1 Tbsp vanilla paste or vanilla
- 1/4 cup (60 mls) aquafaba (~ half of the liquid from one can)
- 1/8 tsp cream of tartar
- Dried fruit (to taste)
Instructions
- In a large mixing bowl, stir together oats, almonds, salt and cinnamon (do NOT add coconut flakes).
- In another bowl mix together oil, honey, and vanilla.
- Stir liquid ingredients into the oat mixture and set aside.
- Preheat oven to 300F / 150C degrees
- In a stand mixer, beat aquafaba and cream of tarter until peaks form. This can take 3-5 minutes depending on the mixer.
- Stir aquafaba into the oat mixture and then spread out onto a paper or silpat lined baking tray.
- Bake for 5-10 minutes until just starting to brown. Remove from oven and stir in coconut flakes. Cook for 10-15 minutes longer or until golden brown. Check regularly as this can burn easily and stir every few minutes for even cooking.

Could you substitute vinegar for the cream of tartar? A friend told me that trick for play dough recipe swaps.

I though you were joking until I googled it … Apparently you can substitute lemon juice or vinegar for cream of tartar at a ratio of 2 tsp vinegar/,lemon juice for every one teaspoon of cream of tartar. I suppose it makes the playdough taste better 😉
