As a skeptic of things that are hidden into traditional recipes, I have to say these black bean brownies were great. You’d never guess these rich, and chocolaty bites contain black beans.
These Black Bean Brownies are naturally gluten free. The coffee granules are optional but the coffee flavour enhances the chocolate flavour without tasting of coffee.
Don’t be too fooled by the healthy addition of black beans, as they taste best smothered in salted caramel sauce and ice cream!
Black Bean Brownies
Ingredients
- 8 oz can black beans, drained and rinsed
- 1 egg
- 1 yolk egg
- 1 1/2 Tbsp oil (canola or other neutral)
- 1 tsp vanilla
- 1/2 tsp instant coffee granules
- 1/3 cup fine sugar
- 1 pinch salt
- 1/4 tsp baking powder
- 3 Tbsp cocoa
- 1/3 cup mini chocolate chips
Instructions
- Blend black beans in mini food processor until a rough paste is formed. Mix in eggs, oil, vanilla and coffee granules.
- In another bowl, mix together sugar, salt, baking powder and cocoa.
- Add dry ingredients into the black bean mixture. Stir in chips if using.
- Fill greased regular muffin tins 1/3 full and bake at 350 degrees for 20-30 minutes depending on your desired level of fudginess. (You could also top with chopped nuts or chocolate chunks if you like just before baking.)
- This should make 8 to 10 brownies, depending on the size of your tin.
- Serve with salted caramel sauce or vanilla ice cream…or both!
