Baked Oatmeal with Blood Oranges

Make ahead baked oatmeal with caramelised orange topping

Ingredients

  • 1 Tbsp Butter or butter substitute
  • 1 1/2 cups oats
  • 1/2 cup quinoa (optional)
  • 1/2 cup slivered almonds
  • 2 tsp ground flax seed
  • 1 Tbsp chia seed (optional)
  • 1/3 cup brown sugar
  • 1 tsp ginger
  • 1 tsp cinnamon
  • 2 Tbsp sesame seeds (optional)
  • 1/2 tsp baking powder

Wet

  • 2 cups milk
  • 1 tsp vanilla or vanilla paste

Instructions

  • Melt butter in a round 8" baking dish.
  • In a large bowl, combine oats, quinoa, buckwheat, flaked almonds, baking powder, salt, flax and chia seeds, spices, sugar and seeds.
  • In another bowl, combine 2 cups milk (coconut, almond or soy) with vanilla paste.
  • Mix dry and wet and add to baking dish. Top with blood orange segments sprinkled with sugar.
  • Bake for ~30 min at 350 degrees.
  • Serve with yogurt and maple syrup.
