Cranberry Orange White Chocolate Cookies

Ingredients

  • 1/2 cup butter (or vegan butter)
  • 2/3 cup white sugar
  • 1 tsp vanilla paste
  • 1 Tbsp orange zest (from 1 orange
  • 1 Tbsp fresh orange juice (from 1/2 orange)
  • 1/2 cup flour
  • 3/4 cup quick cook oats (or regular oats pulsed a few times in a processor)
  • 1/2 tsp baking soda
  • 1 tsp salt
  • 1/2 cup dried cranberries (chopped)
  • 1/2 cup white chocolate chips or chunks

Instructions

  • Preheat oven to 300. Line baking trays with baking paper.
  • In a stand mixer, mix butter and sugar together until light and creamy. Add in vanilla paste, orange juice.
  • In a separate bowl, mix together flour, soda, salt and oats.
  • On low speed, slowly pour in flour mixture into the butter mixture and mix until combined.
  • Stir in cranberries and white chocolate by hand.
  • Cover and chill for at least 1 hour. Scoop into small balls and chill again for at least half hour. (I usually place in the freezer at this point and cook from frozen when desired.)
  • Cook at 300 for 8-10 min, careful not to let them brown too much.
  • Let cool on baking pan until able to remove them to a rack to cool completely.
