Fig, Hazelnut and Cardamon Granola
Sweet, spicy granola, perfect for breakfast or as part of a deconstructed crumble

- 200 grams oats
- 30 grams spelt flour (optional)
- 15 grams flax seed (optional)
- pinch salt
- 1/2 tsp cardamon
- 1 tsp cinnamon
- 20 grams sesame seeds
- 65 grams canola oil
- 50 grams brown sugar
- 1 tsp vanilla paste
- hazelnuts (roasted and roughly chopped)
- dried figs (chopped)
- crystallized ginger (chopped)
For serving
- yogurt
- blueberies and / or fresh figs
Stir together oats, flour, seeds, spices and salt in one bowl.
In another bowl, stir together brown sugar, oil and vanilla paste.
Mix liquid ingredients into dry.
Spread on silpat or baking paper lined pan and bake at 180 degrees for ~30 minutes, stirring regularly so it browns evenly.
Let cool, then stir in roasted hazelnuts, ginger and figs.
