Fig, Hazelnut and Cardamon Granola

Sweet, spicy granola, perfect for breakfast or as part of a deconstructed crumble

Ingredients

  • 200 grams oats
  • 30 grams spelt flour (optional)
  • 15 grams flax seed (optional)
  • pinch salt
  • 1/2 tsp cardamon
  • 1 tsp cinnamon
  • 20 grams sesame seeds
  • 65 grams canola oil
  • 50 grams brown sugar
  • 1 tsp vanilla paste
  • hazelnuts (roasted and roughly chopped)
  • dried figs (chopped)
  • crystallized ginger (chopped)

For serving

  • yogurt
  • blueberies and / or fresh figs

Instructions

  • Stir together oats, flour, seeds, spices and salt in one bowl.
  • In another bowl, stir together brown sugar, oil and vanilla paste.
  • Mix liquid ingredients into dry.
  • Spread on silpat or baking paper lined pan and bake at 180 degrees for ~30 minutes, stirring regularly so it browns evenly.
  • Let cool, then stir in roasted hazelnuts, ginger and figs.
