Baked oatmeal is a perfect make ahead breakfast. Both the ingredients and measurements can be eyeballed with little impact to the results. Blood oranges are sometimes worth their weight in gold as, depending on where you live, they can be next to impossible to source. These can be replaced with regular oranges, figs or other fruits as desired.

Baked Oatmeal with Blood Oranges
Make ahead baked oatmeal with caramelised orange topping
Servings: 4
Ingredients
- 1 Tbsp Butter or butter substitute
- 1 1/2 cups oats
- 1/2 cup quinoa (optional)
- 1/2 cup slivered almonds
- 2 tsp ground flax seed
- 1 Tbsp chia seed (optional)
- 1/3 cup brown sugar
- 1 tsp ginger
- 1 tsp cinnamon
- 2 Tbsp sesame seeds (optional)
- 1/2 tsp baking powder
Wet
- 2 cups milk
- 1 tsp vanilla or vanilla paste
Instructions
- Melt butter in a round 8" baking dish.
- In a large bowl, combine oats, quinoa, buckwheat, flaked almonds, baking powder, salt, flax and chia seeds, spices, sugar and seeds.
- In another bowl, combine 2 cups milk (coconut, almond or soy) with vanilla paste.
- Mix dry and wet and add to baking dish. Top with blood orange segments sprinkled with sugar.
- Bake for ~30 min at 350 degrees.
- Serve with yogurt and maple syrup.
