Sweet and spicy granola filled with figs, hazelnuts and crystallized ginger. The granola can be used as a part of a breakfast parfait or even over grilled fruit with ice cream for a deconstructed crumble.
Recipe
As with all granola recipes, exact measuring is not required. It is however, much faster if you use a kitchen scale, zeroing out after each ingredient. This allows you to pour everything directly into one bowl with no need for measuring cups.
Fig, Hazelnut and Cardamon Granola
Ingredients
- 200 grams oats
- 30 grams spelt flour (optional)
- 15 grams flax seed (optional)
- pinch salt
- 1/2 tsp cardamon
- 1 tsp cinnamon
- 20 grams sesame seeds
- 65 grams canola oil
- 50 grams brown sugar
- 1 tsp vanilla paste
- hazelnuts (roasted and roughly chopped)
- dried figs (chopped)
- crystallized ginger (chopped)
For serving
- yogurt
- blueberies and / or fresh figs
Instructions
- Stir together oats, flour, seeds, spices and salt in one bowl.
- In another bowl, stir together brown sugar, oil and vanilla paste.
- Mix liquid ingredients into dry.
- Spread on silpat or baking paper lined pan and bake at 180 degrees for ~30 minutes, stirring regularly so it browns evenly.
- Let cool, then stir in roasted hazelnuts, ginger and figs.
