Vegan Magic Bars

7-layer bars or magic bars with coconut condensed milk to up the coconut flavour and convert into plant based.

Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup butter (or vegan butter)
  • 100 g bar dark chocolate, cut into small chunks or 1 cup chocolate chips (I used Lindt dark chocolate)
  • 1 1/2 cups grated unsweetened coconut
  • 11 oz can of coconut condensed milk (I used Nature's Charm)
  • 1/2 cup chopped almonds (or other type of nuts)

Instructions

  • Preheat oven to 350 degrees. Line an 8x8" or 9x9" pan with baking paper.
  • Melt butter. Stir in crumbs and then press down evenly in the bottom of the prepared pan.
  • Sprinkle nuts, chocolate and coconut evenly over the crumbs.
  • Pour condensed milk over the top, ensuring evenly covered.
  • Bake for 25 min until edges are golden and the middle is set.
  • Allow to cool completely before slicing. Store slices in fridge or freezer.
