This isn’t fancy baking or even an original recipe, and its certainly not the most beautiful food to photograph, but I guarantee this tastes amazing! Google Seven-Layer or Magic Bars and you will find heaps of sites with a very similar recipe. I think it may have originated from Eagle Brand condensed milk as a back of the can recipe.
Anyways, I have never really been fond of condensed milk and as I am trying to move away from dairy, these never really appealed to me. That all changed when I discovered coconut condensed milk by Nature’s Charm. It is so delicious, I could eat it straight from the can.
I made a few substitutions to the basic recipe to make it plant based and less sweet. Even if you eat dairy products, I’d still recommend using the coconut condensed cream.
I made homemade graham crackers as I couldn’t find any at the store, but most store bought brands are naturally vegan. Also, I used unsweetened fresh grated coconut as it is readily available and the bars are sweet enough.
Recipe
Vegan Magic Bars
Ingredients
- 1 1/2 cups graham cracker crumbs
- 1/2 cup butter (or vegan butter)
- 100 g bar dark chocolate, cut into small chunks or 1 cup chocolate chips (I used Lindt dark chocolate)
- 1 1/2 cups grated unsweetened coconut
- 11 oz can of coconut condensed milk (I used Nature's Charm)
- 1/2 cup chopped almonds (or other type of nuts)
Instructions
- Preheat oven to 350 degrees. Line an 8×8" or 9×9" pan with baking paper.
- Melt butter. Stir in crumbs and then press down evenly in the bottom of the prepared pan.
- Sprinkle nuts, chocolate and coconut evenly over the crumbs.
- Pour condensed milk over the top, ensuring evenly covered.
- Bake for 25 min until edges are golden and the middle is set.
- Allow to cool completely before slicing. Store slices in fridge or freezer.
